Athlon 64 CPUs with the 3xxx+ numbers are Socket 754. The nForce3 250chipset boards are just starting to come out. If you're a tweaker, these are a better choice than the nForce3 150 or VIA K8T800 chipsets, simply because of the AGP/PCI divider. They'll be spendy, though, because they're brand new parts.
For Intel I wouldn't rule out the VIA KT880 chipset or a board that uses the SiS 655TX chipset. If you want to go Intel on the chipset, I'd get the 875 over the 865 simply because Intel meant for PAT to run on the 875 and board makers have had to kluge a PAT emulation together for the 865.
